The Jaguara farm in Minas Gerais is 15 years old and has volcanic terroir and high altitude - especially for Brazil. The first quality analysis of their production was done in 2015 and showed great results and potential, with intense yellow fruits resulting from the plants interaction with this specific environment.

Now, the farm is concerned with sustainability, using technologies that cause low impacts on the environment, using varieties of coffee more resistant to leaf rust, integrated weed management, pruning and others.

The varieties are Mundo Novo, Yellow Catuai, Yellow Catucai and Acaia. The best results were from Yellow Catuai, produced at altitudes of 1040 m, that presented lower maturation and uniformity.

The farms philosophy is to plant with love and respect for the environment, help families and give them jobs and opportunities to have a better life.

Processing

The cherries are handpicked and “naturally processed”. Normally the process gives you a sweeter coffee because of sugar migration from the pulp into the beans. The coffees are picked when evenly ripe, and hand sorted before being dried on a patio. Picking of defected coffee cherries continues during the drying period.
