From Horsham Coffee Roaster:

This is the second year that we have bought two exclusive processed microlots from the Los Nogales estate in El Salvador. This excellent project is run in partnership with DR Wakefield and allows the roaster to select a plot, varietal and processing method. Los Nogales estate is owned by the Salaverria family and covers 30 hectares in the Apanaca Llamatepec region. The estate is broken down into smaller plots of land with different varietals. They are able to offer different processing methods from the same plot and varietal and we selected a natural and black honey process from this years harvest.

The natural process is fairly simple but requires perfectly ripe cherry. Pickers are trained to hand harvest only cherry with the correct ripeness and once harvested the coffee is dried on concrete patios. This particular natural has a very clean, juicy character with minimal fermentation and lovely notes of prune, golden rainsin and a caramel like sweetness.

 This coffee works well with all filter brewers and espresso. For filter we recommend a 1 - 16 brew ratio, and for espresso a 1 - 2.5 brew ratio. Example: Filter: 15g - 250ml // Espresso: 18g - 45ml
