The stunning, soaring peaks of Northern Peru seem to go on endlessly into the high Andean cordillera. Across thousands of these lush green slopes and ridges are small, family orientated coffee producers, blessed with perfect growing conditions and traditional cultivars, yet often unable to gain the visibility that their coffee so richly deserves. Times are changing and in parallel with single farm lot visibility, the nuances and qualities of coffee from smaller community collectivos are beginning to be recognised.

This coffee from La Danta, a small collectivo of 74 producers in the district of San Ignacio, represents how a community can come together with a shared desire for quality coffee production. A the same time the group have a strong desire to support the lush vegetation that coffee grows amongst. This is where the name La Danta originates, named after the local endangered Andean Tapir.

Flavour wise, La Danta has all the hallmarks of the best coffees of San Ignacio. Ever appealing flavours of toffee, Seville orange milk chocolate combine over a velvety, silk like mouthfeel. Secondary flavours of honeysuckle florals, and dried black fruit add complexity to the flavours supported by a praline like finish and structured positive acidity.

La Danta is delicious as a French press and aeropress where the toffee and milk chocolate like flavours are enhanced by the fuller mouthfeel and black fruit notes come more to the fore. On filter the toffee moves more to caramel in nature and the refined structure and clarity of La Danta shines through.
