From Clifton Coffee:

Located in one of the most remote areas Huehuetenango, the Lopez family have been growing coffee in this area for approximately 38 years. When they first started culitvating coffee, there were nor roads around this region and they had to transport coffee on horses and mules for 3 days to get it to the nearest town to sell. In 1999, El Mirador won a price for their quality, and this has motivated their desire to strive for excellence. The coffee trees are pruned throughout the season until the cherries are ready for picking. Once picked they are mechanically de-pulped, fermented in wet fermentation takings for 40 hours then fully washed and soaked in fresh water for a further 2 hours. The coffee is then finally dried on raised beds for 15 days.
