The Fields is the adventurous coffee that has been a key player in our forward-thinking desire for quality and innovation at the roastery. This coffee is a nod to our past as one of the pioneers in the London coffee scene and a representation of our position in Hackney. We are passionate about demonstrating new wave ideas and thoughts on all platforms of coffee production and eager to showcase our findings through the Fields - primarily focusing on natural and pulp-natural coffee. this single origin roast will continue to be an outstanding coffee in all brew methods, expressing exciting advancements in the coffee production chain. Emphasis on farm-to-roaster relationships ensures we see the best quality, seasonal coffees coming from the same farms every year.

Every year we are blown away by the quality of coffee coming from the Sasaba Washing Station. You have probably heard about this coffee before - Sasaba's washed coffee is our mainstay Climpson Estate espresso, so we couldn't resist the chance to showcase the unique difference processing can make with this naturally processed lot as the latest version of The Fields.

Located in the remote reaches of the Guji District, the Sasaba Washing Station processes the cherries from the numerous small-holders in the area. The selective picking of only ripe red cherries is the key, with the natural coffees dried with the fruit intact on raised beds for 15-20 days. This imparts the classic intensity of wild fruit fermentation with a clean sweetness unique to such careful quality control.

Emanating funk and sweetness you are going to know about this coffee, even as you brew it. Complex and impressively clean, expect flavours of wild berries and dried fruit with a creamy body.
