We showcased this coffee way back in the days of the Fields Version 10 and we are pleased it is back and tasting just as interesting as ever.

Sehe washing station is set in the province of Cibitoke and owned by Salum Ramadhan, one of the true pioneers of the Burundi coffee industry. Having had the experience of operating many well-regarded coffee processing facilities, Salum has bought a meticulous approach to the processing at Sehe. Coffees from many local farmers are hand-sorted, floated (to remove less ripe cherries) and separated by picking dates. Washed coffees are allowed a 12-18 hour fermentation and soaking period in fresh water before being moved to raised beds for drying. Utilising shade instead of direct sun the coffee dries over 15-20 days, improving consistency and long-lasting quality.

With such rigorous standards in place, it is no surprise that the resulting cup is a complex combination of baked rhubarb, tart berries and a silky, almost herbal tea-like mouthfeel.
