The Fields is the adventurous coffee that has been a key player in our forward-thinking desire for quality and innovation at the roastery. This coffee is a nod to our past as one of the pioneers in the London coffee scene and a representation of our position in Hackney.

As part of the adventure, The Fields offers us the chance to explore alternative approaches to processing, sustainability and experiment with some of our closest coffee growing partners. All of which results in unique flavours from some of our favourite producers around the world.

This version of The Fields highlights what is now looked back on as an exceptional year for the Brazilian coffee industry. Not only did Brazil play host to some of the World Coffee Championship events but many of these events were then won with unique Brazilian coffees. This marked a turning point in the out-dated perception that Brazil could only produce high-volume, standard “chocolate-nut” flavours.

With this in mind selecting this coffee was an obvious move however finding it was a little off the usual route. In fact we only acquired this sample at a highway petrol station when travelling with our friend and local legend Bruno Souza. The Guimarães brothers were eager to pass on some of their samples and met us with bags of green coffee and a tray of freshly baked Pão de Queijo. Needless to say, these were some of the best coffees and cheese breads tasted on that trip.

The previous year other members of the Climpson team had actually stopped in at Fazenda Lavrinha though at that stage it was only newly planted as the family started to diversify their agricultural business. Since that time they have developed their coffee with methodical precision and 160 hectares now in production. Varieties are processed separately and improved selection, sorting and drying has created a new range of flavour profiles.

This lot is roasted with adventurous espresso and filter brewers in mind, emphasising notes of berries and a dense creamy sweetness.
