At only one hectare, Fray David’s farm – El Rosal – is small even by local standards. Fray is part of the Moreno family, who settles in a small valley called La Despensa in Pavon, Urrao, some 50 years ago.

Fray had dabbled with coffee in the past, but in the face of inheriting 1 hectare, he knew that added value was crucial. He had a few options to keep his small farm profitable, so he decided to go all in and replant his small parcel with Caturra Chiroso, a variety of Caturra originating in Urrao that is rarely seen outside the region. The variety is characterised by an elongated cherry and is known locally for it’s productivity. The cup quality is generated through meticulous processing methods, using the ‘extended fermentation’ method common to the area.

Over the course of three days, each day’s pulped cherries are added to a fermentation tank with the previous days’ picking. The control over pH permits longer fermentation times that produce a fruit forward cup without the acetic acids often produced.
