Stone fruit acidity and caramel sweetness. Well balanced. We recommend this coffee for filter styles, but it will also make a great sweet and bright espresso.

Location & Farmer

Members of the Kalico cooperative farm this coffee at around 1800 metres above sea level in the Muyinga province, situated in North-Eastern Burundi. The Kalico cooperative is all-female owned, and in 2012 they bought the Murango washing station. The varietal is red bourbon.

Process

This coffee is wet processed (washed). In this process the ripe coffee cherries are picked and sorted for unripes/defects, then pulped to remove most of the fruit surrounding the bean then soaked in fermentation tanks to remove the remaining fruit pulp. It is then dried on raised beds until it reaches a moisture content of 10
