Sourcing and quality
We only use Arabica beans as we feel they have a lot more to offer than Robusta. We work alongside coffee importers who are able to provide 100% traceability back to the farms that grew their offerings. We believe in working with importers who are dedicated to building lasting relationships and paying fair prices to the farmers.
It is important to understand that fresh coffee is always best, but sometimes you have to be a little patient to get the best results. For our espresso blend we always recommend a minimum of 5 days rest after roasting, this will allow the coffee to degas properly and lead to much smoother balanced cup. Too fresh at this point can leave it tasting fairly acidic. If you are purchasing coffee for filter or to be manually brewed 2 days minimum rest time is advised.
