The East African country of Burundi is often overlooked for its coffee quality but produces some of the most exceptional coffees in the region. To the north the highland districts produce some of Burundi’s highest quality coffees, and one of these, Kirundu, is gaining a reputation for delicious natural processed micro-lots. Central to this reputation is CAFEX, one of the growing number of independent co operatives in Burundi.

CAFEX takes an innovative approach to both processing and wider co-op member support, offering a weekly wage in a country where income can be sporadic at best in the agricultural sector. With most farmers typically owning a few hundred trees at most, they pool their coffee together via centralised washing stations. This pooled coffee would usually be depulped and because the relatively cool, humid mountain air of the north means coffee dries slowly after harvest. Switching to natural processing needs deft skill and attention to detail, allowing subtle fermentation to take place in the fruit while it dries, producing distinctive and quality coffees very different from the more traditional washed processed Burundian style.

This slow, subtle fermentation brings out a succulent, fruit forward natural process coffee. Mouth watering strawberry, fresh apricot and lemon citrus are supported by a dark muscovado sugar like quality. Dark chocolate and black tea florals add nuance, while a viscous jam like viscosity enhances the berry fruit like quality. When brewing with filter brings out more of the berry and brown sugar like qualities while immersion brewing focuses more on the delicious jammy mouthfeel adding a black fruit like note on the finish.
