The Fields is the adventurous coffee that has been a key player in our forward-thinking desire for quality and innovation at the roastery. This coffee is a nod to our past as one of the pioneers in the London coffee scene and a representation of our position in Hackney.

The adventure continues as we explore an experimental variety called Tabi. We chose this washed coffee for its clean, sweet profile, and interesting variety, aimed more at sustainable production.

Having tried a number of experimental varieties and processes from the Saldarriaga family we have chosen this unique washed lot of the single variety Tabi. Developed by agronomists at CENICAFE (Colombia's Coffee Research Institute) Tabi is built on a cross-bred of Typica, Bourbon and Timor to develop a high yielding variety, holding the flavour characteristics of coveted varieties but also offering resistance to coffee leaf rust. This particular lot comes from the Saldarriaga's two neighbouring farms, La Claudina and El Encanto. After selective picking the coffee is pulped, allowed a 24 hour fermentation before being washed in clean water and dried on raised beds over 25 days.

Upon taking over his family farm in Antioquia, Colombia, Juan Saldarriaga immediately set to innovating. He has planted an impressive range of coffee varieties and taken on many advanced processing methods, all with the aim of better understanding their affects in local conditions. Already a notable improvement has been seen with a new approach to drying in an area notorious for humidity challenges. Juan has constructed raised beds under shade to slowly control the drying process and achieve a more consistent moisture content from farm to export. This results in a clean and sweeter cup profile holding crisp apple, rose, honey and citrus.
