From Climpson & Sons:

After a few years absence from our menu our latest single origin brings the return of Mexican coffee courtesy of producer Adolfo Xotlanihua Temoxtle and his farm Finca Tanos. From the mountains of Veracruz state to our East London roastery, this is a coffee sourcing story almost in reverse with a group of producers reaching out and delivering a uniquely sweet and balanced coffee.

In recent years Mexico has not been seen as a high-profile producing nation though this is surely set to change with speciality grade production now gathering significant momentum. With a strong biodynamic ethos, these Mexican producers are focused on preserving their unique ecosystems and improving livelihoods within their local communities. At its core, this approach avoids all chemical fertilizers and considers the soil, waterways, weather and plants as an interrelated system. Using only natural sources to replenish soil vitality creates a healthier crop and more sustainable future. In putting their environment and local community first they have seen a rapid improvement in coffee quality and we were proud to see this micro-lot arrive in the UK.

Developed by the Mexican Institute of Coffee and still considered uncommon this coffee is of the Garnica variety, a higher-yielding cross of Mundo Novo and Caturra. This displays positive characteristics of both with a creamy body and lasting malic sweetness.

As a varied range of flavour possibilities start to emerge we are expecting to see more Mexican coffees heading to Europe in the coming years. With more of the speciality coffee world catching on to this potential the timing worked out almost perfectly for this coffee to find us.
