High quality natural processed micro-lots from Southern Ethiopia have vibrant, complex and fruit focused flavour profiles that sets them apart in speciality coffee.  They act as a real counterpoint to the more floral, tea-like like washed coffees from this region, a perfect example of how processing changes flavour.

Since most coffee producers in the region are very small, almost all lots will be made up of cherries from hundreds of producers, often over a relatively wide area.  Being able to source single producer lots, or in this case a small neighbourhood (called 'keble') helps give more traceability.  This is one such coffee which was grown and harvested by producers in and around a keble called Debo before then being dried at a mill in Chelelektu town.

This extra level of traceability gives the coffee a more distinct flavour profile than larger regional selections.  Classic natural Ethiopian flavours of sweet blueberry and strawberry are immediately noticeable.  Further characteristics of elderflower, green mango and milk chocolate then bring complexity as the coffee cools.  A syrup-like sweetness and medium intensity grape like acidity hold all these flavours together.

We've kept the roast medium to light so it will be easiest to brew as a filter or aeropress.  The lighter headier flavours are more noticeable with filter brews while the aeropress helps develop those berry fruit like flavours.
